The form of the mean stress tensor in monodisperse emulsions is studied in the second-order approximation with respect to the volume density of the particles, for a number of flows which are of rheological interest. It is shown how the particular features of the two-particle interaction between liquid spheres, especially the non-zero differences between the normal stresses in shear flows, give rise to non-Newtonian properties of the emulsion.
