The author studies the evolution of the differential invariants (curvatures) of curves evolving in Riemannian manifolds of constant curvature. Using Cartan connections it is shown that the Poisson structures governing the Hamilton evolution of curves are obtained through standard Poisson reduction from the Kac-Moody bracket on the dual of the loop algebra of SO\((n)\). Choosing either Frenet or natural framings of curves, one obtains different Hamiltonian structures. The emphasis of the paper is on the geometric description of these Poisson structures and relations among them.
