Interpolation with functions to known, other function values or data is an important tool in pure and applied mathematics, both in real and complex variables. Here, in this article, even infinitely many interpolation conditions can be satisfied in complex variables by analytic functions. The points at which these conditions arise, however, must satisfy an admissibility condition. For this, sufficient conditions on subsets of analytic functions on open subsets of the complex plane and on the given data are provided such that this subset contains functions (``approximants'') which interpolate at the aforementioned data. Some applications, where these conditions are satisfied, are provided as well.
