The detailed proofs of results previously announced [\textit{A. Schilling} and \textit{P. Tingley}, ``Demazure crystals and the energy function'', 23rd International Conference on Formal Power Series and Algebraic Combinatorics (FPSAC 2011), Discrete Math. Theor. Comput. Sci. Proc., AO, Assoc. Discrete Math. Theor. Comput. Sci., Nancy, 861--872 (2011)] are given in detail. The paper concerns the interactions between Kirillov-Reshetikhin crystals and Demazure crystals (in the case of quantum affine algebras without derivations and of non-exceptional type). By means of the natural grading on Demazure crystals, a characterization of the energy function of Kirillov-Reshetikhin crystals is given. An interesting consequence of this result is a formula for the Demazure character and applications to Macdonald polynomials and \(q\)-deformed Whittaker functions.
