The notion of mixing for finite measure-preserving systems is well-known to not have an entirely satisfactory formulation for infinite measure. Here an approach using ideas from statistical mechanics is developed to permit a definition of mixing for observables (functions) with infinite-volume average. In particular, this permits the use of observables supported throughout an infinite measure phase space. Various possible definitions of mixing, including this one, are compared by testing them on the class of infinite measure-preserving transformations defined by random walks.
