In the paper, families of compactly supported nonseparable interpolating refinable functions \(\{\varphi_n\}_{n\in {\mathbb N}}\) are constructed which have the arbitrary regularity property, i.e., for every \(\alpha > 0\) there is an integer \(n_0\) such that \(\varphi\in {\mathbb C}^{\alpha}\) for all \(n > n_0\). The idea for this construction works for an arbitrary dilation matrix. The author starts with a known refinement symbol that satisfies the Strang-Fix conditions of low order. By combining it with Bernstein polynomials in appropriate way, he obtains more complex symbols satisfying the Strang-Fix conditions of a wanted order. Moreover, an easy-to-verify geometrical condition on the starting symbol guarantees that Cohen's condition is satisfied for the whole family \(\{M_n\}_{n\in{\mathbb N}}\) of symbols that correspond to the refinable interpolating functions \(\{\varphi_n\}_{n\in{\mathbb N}}\).
