Approximation theorems, uniqueness of signature theorems and Green's theorems are established for interpolants of simple and of Jordan curves. These are on Riemannian manifolds and simple piecewise minimising geodesic. The mentioned Jordan curves are of finite \(p\)-variation with \(p\in[1,2)\).
