    The main object of study in this paper is a functor which associates to any Feynman category a bialgebra: it is based on the morphisms of the category, the monoidal structure gives the product and the coproduct is the deconcatenation according to the composition of the category. This construction is done in two different settings, symmetric and non symmetric. Quotients Hopf algebras of these objects are obtained by ``dividing out isomorphisms'' (from the authors' words). It is shown that this construction includes examples from simplicial structures (in this case, a special accent is put on the role played by Joyal's duality), (co)operads, coloured (co)operads, graphs, etc. It is shown that the three main examples of this series of papers can be inserted in this setting: Goncharov's Hopf algebra, coming from number theory, Connes and Kreimer's Hopf algebra, coming for Quantum Field Theory, and Baues's Hopf algebra, introduced for the study of double loop spaces.
