This first part of a series of papers on complete Calabi-Yau manifolds asymptotic to Riemannian cones at infinity, is devoted to general existence and uniqueness results. The uniqueness part is based on the following new idea: A harmonic function of strictly less than quadratic growth on a complete asymptotically conical Kähler manifold with \(\mathrm{Ric} \geq 0\) is necessarily pluriharmonic. Another important question is the precise rate of decay of the metric to its tangent cone and hence, the otimal rate for the Stenzel metric of \(T^*S^n\) is obtained.
