This paper focuses on certain aspects of homological mirror symmetry at the level of Grothendieck groups in the case of toric Calabi-Yau manifolds. The main results are a set of conjectures which relate different projective resolutions of a Gorenstein toric singularity and which are explicitly verified in a non-trivial example. Specifically, for two adjacent triangulations T1 and T2, there are natural maps between the Grothendieck groups of the associated smooth toric Deligne-Mumford stacks. These maps are expected to be compatible with the analytic continuation of the solutions of certain GKZ hypergeometric systems. Furthermore, it is conjectured that the pairing between the Grothendieck group of a triangulation and the corresponding Grothendieck with compact support descends to a pairing between solutions of associated GKZ systems.
