    A position and subterm on that position in a term is essential if it can be used to change the value of the term in some representation of that term in an algebra; a variety \(V\) is called stable if the set \(\Sigma=\text{Id}(V)\) of defining identities is also closed for substitution of subterms in essential positions. Here are described all stable varieties of semigroups and groupoids, e.g. a variety of semigroups is stable iff it consists of zero, right (left)-zero semigroups or satisifes besides the associativity identity one of the identities \(x_1x_2x_3=x_1x_2\), \(x_1x_2x_3=x_2x_3\) or \(x_1x_2x_3=x_2x_3\).
