The so-called dimer model is a statistical mechanics model which describes the adsorption of diatomic molecules on the surface of a crystal. A dimer configuration is a path in a graph embedded in a torus. The paper deals with uniform toroidal honeycomb dimmer models, that is to say in which the crystal is considered as equivalent to the regular hexagonal lattice. It is shown that when the mesh of the graph tends to zero and when, loosely speaking, the torus remains invariant, the winding number of the collection of loops converge in law to a two-dimensional discrete Gaussian distribution.
