The authors show, by means of an effective construction, that there exists a unique factorization domain \(R\subset\overline{\mathbb Q}\) with quotient field \(K\) such that: (a) \(R\) has infinitely many prime ideals; (b) \(K\) is not Hilbertian; (c) \(K\) is not contained in the union of the sets of values \(f_i(K)\) for any finite set of rational functions \(f_1,\dots,f_n\in K(X)\) of degree \(\geq 2\). The construction of a UFD satisfying (a) and (b) gives a negative answer to a question raised by Fried and Jarden and implies a negative answer to a related question of Weissauer. In the same context, the authors also find sufficient conditions on a field \(K\) in order that condition (c) holds.
