Using a theorem of \textit{E. Lerman} and \textit{S. Tolman} [Trans. Am. Math. Soc. 349, 4201--4230 (1997; Zbl 0897.58016)] and the existence of ``global'' action angle coordinates, the author gives an effective parametrization of all compatible toric complex structures on a compact symplectic toric orbifold, by means of smooth functions on the corresponding moment polytope. This is equivalent to parametrizing all toric Kähler metrics and generalizing an analogous result for toric manifolds. A simple explicit description of interesting families of extremal Kähler metrics, arising from recent work of \textit{R. L. Bryant}, [J. Am. Math. Soc. 14, 623--715 (2001; Zbl 1006.53019)] is given as an application of the approach. The fact that in dimension four these metrics are self-dual and conformally Einstein is also discussed. This gives rise in particular to a one-parameter family of self-dual Einstein metrics connecting the well-known Eguchi-Hanson metric [\textit{T. Eguchi} and \textit{A. J. Hanson}, Ann. Phys. 120, 82--106 (1979; Zbl 0409.53020)] and Taub-NUT metrics [\textit{T. Eguchi, D. B. Gilkey} and \textit{A. J. Hanson}, Phys. Rep. 66, 213--393 (1980)].
