A graph-theoretic algorithm for construction of canonical transformations in celestial mechanics is presented. For every full oriented binary tree there is a symplectic matrix which defines a Jacobi transformation. This leads to the proof of the symplectic property of all Jacobi coordinates. This theorem is proven in the paper and examples of the algorithms for canonical transformations are given. The properties of the Jacobi transformations that make them applicable to celestial mechanics are described.
