    The paper presents a study of entropy and decoherence in relativistic fermionic field theories. The entropy is defined by the Von Neumann formula in terms of a density operator, and the main contrivance is to introduce a Gaussian ansatz for the density opeator of a collection of fermions. One considers successively an entropy generation in fermionic quantum mechanics, and then an entropy generation in a fermionic quantum field theory. Coherence and decoherence are studied closely related with this Gaussian approximation.
