The authors give a complete local description, in terms of the Gauss parametrization, of rank two Euclidean hypersurfaces of dimension \(n\geq 3\) that admit a genuine isometric deformation in \(\mathbb R^{n+2}\). They are divided into three distinct classes from which the less interesting ones are formed by ruled and surface-like hypersurfaces. The characterization of the Gauss images of the hypersurfaces in the remaining third class turns out to be significantly more involved than that in the Sbrana-Cartan theory. These hypersurfaces are rather special and the authors construct a large family of explicit examples.
