This paper uses algebraic geometry to study signature varieties, which are varieties that are parameterized by the signatures of a class of paths. In particular, signature varieties of polynomial paths, piecewise linear paths, and random paths arising from Brownian motion have a common generalization to the class of rough paths, whose signature variety is called the Rough Veronese variety, and the primary objective of this paper is to study its geometry. It is shown that the Rough Veronese variety is toric, and the monomials that parameterize it are characterized. An example is provided for which the Rough Veronese variety is not generated by quadrics, and it is shown that this provides an answer to the question by \textit{C. Améndola} et al. [Forum Math. Sigma 7, Article ID e10, 54 p. (2019; Zbl 1411.14068)] of whether the ideal of the universal variety must be generated by quadrics.
