The aim of the article is to introduce the concept of ``coisotropic deformations'' of associative algebras and to show its relevance for the theory of integrable hierarchies of dispersionless PDEs. Algebraic foundations of the theory of dispersionless integrable hierarchies come from the idea of interpreting them as equations of coisotropic deformations for the structure constants of some associative algebras. The established links structure constants with Hirota's tau function allow to write out the associativity conditions for structure constants in terms of the tau function; in particular the interpretation of algebra-geometric construction given for the universal Whitham equations of genes zero.
