An effective technique to show that Gorenstein sequences coming from compressed polytopes are unimodal was developed by \textit{C. A. Athanasiadis} [J.~Reine Angew.~Math. 583, 163--174 (2005; Zbl 1077.52011)]. The goal of the present note is to use a such technique to find a rich class of Gorenstein toric rings with unimodal \(h\)-vectors arising from finite graphs. Its main result is theorem 3.1, where, under some supplementary conditions, there is proved the existence of a special simplex in the edge polytope of a finite connected graph or in the stable polytope of a perfect graph. A remarkable example is constructed at the end of the paper (see example 3.3).
