Cognitive computing is the simulation of human thought processes in a computerized model having different real-world applications. This handbook contains three sections: ``Fundamentals and principles'', ``Complex analytics and machine learning'', and ``Applications''. It is intended to serve students at advanced undergraduate and beginning graduate levels, as well as industry practitioners. Applications of cognitive computing are focused on food-water-energy nexus, education and learning, spoken language, and the internet of things.
