The authors study the non-conforming immersed finite element method (IFEM) for interface problems see [\textit{Z. Li} et al., Numer. Math. 96, No. 1, 61--98 (2003; Zbl 1055.65130)]. A new symmetric and consistent immersed finite element method is developed for solving elliptic interface problems with a variable discontinuous coefficient on non-body fitted meshes. The method has optimal convergence rates in the \(H^1\), \(L^2\), and \(L^\infty\) norms, which are verified both analytically and numerically.
