In the present paper the van der Waals-Korteweg theory within the framework of elastic materials of second grade is investigated. Two alternative requirements are proposed on which the definition of a fluid may be based. An analogous definition of elastic fluid of grade \(n\) is given. The properties of the fluid are determined by the first \(n-1\) spatial gradients of its density.
