The present paper is a review on continuum theories to model mixtures of immiscible constituents, such as bubbly liquids, fluid-particles mixtures, fluid saturated porous media, and composite materials. A brief description of the foundations of the classical theory of mixtures is given. In section 4, extensions of the classical theory of mixtures are considered: theory of fluidized beds, theory of fluid-saturated porous media, the theory of \textit{R. Sampaio} and \textit{W. O. Williams} [Z. Angew. Math. Phys. 28, 607-614 (1977; Zbl 0379.76033); J. Méc. 18, 19-45 (1979; Zbl 0435.76078)] and theories of two-phase flow of chemically reacting fluids. Section 5 considers the problem of modeling a mixture consisting of a gas which contains a dispersion of solid particles; there are time averaged theories, spatially averaged theories, and time and spatially averaged theories. In section 6, the theories having greater microstructural content and in in section 7, mixture theories for composite materials are described.
