The definition of measures of pseudorandomness (i.e. the well-distribution measure and the correlation measure) introduced by \textit{C. Mauduit} and \textit{A. Sárközy} [Acta Arith. 82, No. 4, 365--377 (1997; Zbl 0886.11048)] is extended from binary sequences to binary functions defined on sets which can be ordered, in two ways (classical and modified), and the sequences of quadratic characters of finite fields of prime power order are analyzed by use of the two definitions, extending the results of \textit{L. Goubin}, \textit{C. Mauduit} and \textit{A. Sárközy} [J. Number Theory 106, No. 1, 56--69 (2004; Zbl 1049.11089)].
