      The pinched \(d\)-Veronese ring in \(n\) variables, pinched at \(\mathbf{x}^\mathbf{m}\) is defined to be the coordinate ring \(P_{n,d\mathbf{m}}=\mathbb{k}[\mathbf{x}^\mathbf{a} | \mathbf{a} \in A_{n,d}-\mathbf{m}]\), where the set \(A_{n,d}\) is defined to be \(\{(a_1,\dots,a_n)\in \mathbb{N}^n | \sum a_i = d\}\). This paper uses the concept of squarefree divisor complexes to study some algebraic properties of the rings \(P_{n,d,\mathbf{m}}\). In particular it presents calculations for their Hilbert series, and finds necessary and sufficient conditions on \(n\), \(d\) and \(\mathbf{m}\) to ensure Cohen-Macaulayness. Special attention is paid to the \(n=2\) case: the paper explicitly computes the \(h\)-polynomial of \(P_{2,d,\mathbf{m}}\), finds a condition for it to be Gorenstein, and examines the shape of its Betti diagram along with some of the values of its Betti numbers.
