The authors construct a family of integrable reductions of the dressing chain. This family of equations, which is of Lotka-Volterra type, is denoted by $LV_b(n,k)$, with $n,k\in\mathbb{N}$, $n\geq 2k+1$ and is a deformation of the family $LV(n,k)$, which itself is a reduction of the Bogoyavlenskji-Itoh system. For the family $LV_b(n,k)$, the authors prove Liouville and non-commutative integrability using a quadratic Poisson bracket and rational first integrals which are deformations of rational first integrals of the family $LV(n,k)$. Finally, considering a discretisation of the Lax pair of $LV(n,0)$, the authors obtain associated integrable discretisations. Under some extra assumptions for this class of discretisations, the discrete map is birational, preserves a weighted volume form and is a Poisson map. Based on the observation that the families of vector fields are quadratic, the authors consider the corresponding Kahan (also known as Hirota-Kimura) discretisation of the system $LV_b(n,0)$ in order to obtain birational maps that have continuum limit to the original continuous equations. It turns out that the Kahan discretisation belongs to the class of discretisations obtained considering the discretisation of the Lax pair. The authors prove that the Kahan discretisation is Liouville integrable as well as superintegrable.
