In this paper, the authors introduce Hilbert evolution algebras as an extension of evolution algebras in a separable Hilbert space, so that an infinite number of non-zero structure constants is feasible. Then, they define the evolution operator of these new algebras, and study under which conditions it is continuous. The iterative application of this operator provides certain boundedness conditions on transition probabilities so that the whole dynamics of a discrete-time Markov chain with infinite countable state space can be described by a particular type of Hilbert evolution algebra. Some properties concerning the boundedness of the evolution operator of this algebra are studied.
