This paper studies multifractal properties of Birkhoff averages on a topologically transitive subshift of finite type. Given two Hölder continuous functions, the \(u\)-dimension of the level sets defined by the ratio of their Birkhoff sums is already known. The author introduces uniform level sets, which form a more restrictive subclass of these level sets, and proves that they nevertheless share the same \(u\)-dimension. The paper then investigates two additional types of subsets of the uniform level sets, each imposing constraints on the frequency or growth of certain subwords. For every value of the level parameter \(\alpha\) lying in the interior of the multifractal spectrum, these constrained subsets are shown to have the same \(u\)-dimension as the full level set. As an application, the author performs a multifractal analysis of the Hölder regularity of a Gibbs measure on a one-dimensional manifold, using the symbolic results to determine the dimension of sets defined by controlled Hölder behavior.
