The known fact is that finite Jacobi matrices of fixed trace support a natural symplectic form. Fundamental in such approach is one special type of Poisson brackets. The purpose of this present paper is first, to realize an analogous claim for an unitary class of analogous Jacobi matrices, namely the CMV matrices and some of their generalizations. For a theory of CMV matrices it is proved that Poisson brackets of orthogonal polynomials, not previously studied even in the Jacobi case, play a crucial role. The construction of such polynomials and the computations of Poisson brackets on the real line are given in Section 2. In Section 3 the known study for the Jacobi matrices form in this general setting is derived. In Section 4 and Section 5 an analogous study for orthogonal polynomials on the unit circle (OPUC) is given and the existence of a natural symplectic form is proved. In the last part of the paper three applications of the obtained fundamental results are discussed concerning the Jacobi matrices, CMV and OPUC matrices: Jacobian of coordinates changes, generalized Toda and Schur flows and differential equations for OPUC
