In this paper, the authors study Lagrangian cobordisms between Legendrian submanifolds in 1-jet bundles. They construct Lagrangian cobordisms using the Morse-theoretic framework of generating families. The resulting Lagrangian cobordisms and fillings (cobordisms with empty negative ends) are called gf-compatible. The authors provide four constructions of gf-compatible Lagrangian cobordisms between Legendrian submanifolds of a 1-jet bundle: {(1)} Every Legendrian submanifold with a generating family has an immersed Lagrangian gf-filling. {(2)} An embedded gf-compatible \(n\)-dimensional Lagrangian cobordism may be spun to an \((n+1)\)-dimensional embedded Lagrangian gf-compatible cobordism. {(3)} A Legendrian isotopy starting at a Legendrian submanifold with a generating family induces an embedded Lagrangian gf-cobordism. {(4)} In some situations, it is possible to create a gf-compatible Lagrangian cobordism by attaching a Lagrangian handle. In addition, the authors used these constructions of gf-compatible Lagrangian cobordisms to study questions related to the geography of Legendrian submanifolds. More precisely, they prove the following: {(1)} For any odd \(n\) and \(\tau\), there exists a fillable Legendrian sphere \(\Lambda\) in \(J^1 \mathbb R^n\) with \(tb(\Lambda)=\tau\). {(2)} If the Laurent polynomial \(P(t)\in \mathbb N[t,t^{-1}]\) is compatible with duality and is in connected form, then for any \(n>2\), there exists a connected Legendrian submanifold of \(J^1 M\), where \(n\) is the dimension of \(M\), with a generating family \(f\) so that the generating family Poincaré polynomial \(\Gamma_f(t)\) equals \(P(t)\).
