This article is an expanded version of the author's plenary lecture at the \(8\)th European Congress of Mathematics in Portorož on 23 June 2021. Sections 1 and 2 are a self-contained elementary introduction to the theory of minimal surfaces in Euclidean spaces, which is accessible to a wide audience. The main part is Section 3, which is a survey of recent results concerning approximation, interpolation, and general position properties of minimal surfaces, existence of minimal surfaces with a given Gauss map, and the Calabi-Yau problem for minimal surfaces. A detailed presentation is available in the monograph and in the AMS Memoir by \textit{A. Alarcón} et al., [Minimal surfaces from a complex analytic viewpoint. Cham: Springer (2021; Zbl 1520.53001)].
