The paper departs from \(p\)-adic probabilistic models, where Kolmogorov probability theory typically fails. A new theory of \(p\)-adic-valued measures is developed in order to describe \(p\)-adic valued stochastic processes and to handle non-Archimedean fields. Since one can adopt basic principles of statistical mechanics to \(p\)-adic measures and stochastic processes, the issue of phase transitions could have been addressed as well. An explicit demonstration of the programme for the \(q\)-state Potts model on a Cayley tree has been given by the author and \textit{U. Rozikov} [Infin. Dimens. Anal. Quantum Probab. Relat. Top. 8, No. 2, 277--290 (2005; Zbl 1096.82007)]. The main purpose of the present paper is to investigate phase transition phenomena from the point of view of dynamical systems. For the generalized \(p\)-adic quasi-Gibbs measures of the \((q+1)\)-state Potts model on the Cayley tree of order two, a one-dimensional fractional \(p\)-adic dynamical system is deduced, whose fixed points are signatures of the phase transition.
